Simple Coffee Cake

I love cake and coffee so to my mind there isn’t a more perfect pairing than coffee cake!

Whenever I make this it doesn’t last long, so I’m not alone in that.

Ingredients

For the cake

225g (8oz) self raising flour

225g (8oz) butter

225g (8oz) caster sugar

1tsp bicarbonate of soda

4tsp Instant Coffee

1tbsp boiling water

4 eggs

Handful of walnuts chopped into small pieces

For the Icing

350g (12oz) icing sugar

175g (6oz) butter, softened

4tsp instant coffee

1tbsp boiling water

Method

Preheat oven to 180C /350F /gas mark 4

In a large bowl or use a stand mixer sift the flour and add they sugar, butter, eggs and bicarbonate of soda. Mix until a smooth dough forms.

Dissolve the instant coffee in the boiling water and add it to the mixture. Mix thoroughly until it is fully blended. Add the chopped walnuts and mix through with a spoon.

Lightly grease two 20cm cake tins and divide mixture evenly between them.

Bake for 30 minutes. They should be golden brown and springy.

To Make the Icing

Mix the softened butter and icing sugar until a smooth mixture forms. Dissolve the instant coffee in the boiling water and it to the mixture. Mix until it is fully blended.

Once the cakes have cooled slice both in half so that you have four thinner cake layers. Place one on the cake board and spread on a quarter of the icing. Place another cake layer on top and cover in a quarter of the icing. Repeat until all four layers of cake have been used with three layers of butter cream icing.

Finally decorate the top with the remaining icing and some walnuts to finish.

When I make this for the kids I leave out the walnuts and just make a two layer cake.
