Those of you regularly following my ramblings will know that this week Little Miss OMG started preschool.
It hasn’t been completely stress free but one bonus side effect has been the arrival of a better bed time and sleeping pattern.
The main reasons being no afternoon nap and obviously the additional tiredness from an afternoon at school.
Yesterday evening she was starting to show signs of tiredness. With the weather being a bit rubbish I had to find an alternative way of keeping her awake.
With a few over ripe bananas to use up. These Gluten and sugar free Banana Pancakes were the perfect option. Quick and simple to make.
1 1/2 over ripe Bananas
1/8 teaspoon baking powder
Break the eggs into a bowl and beat thoroughly, then add the baking powder and mix.
In a second bowl mash the bananas, then add to the egg mixture.
Spray some fry light onto a frying pan and heat over a medium heat. When hot spoon a small amount of the mix into the pan.
Cook for a few minutes and then turn over.
It really is that simple.
I’m just a few minutes you have a delicious, tasty, healthy snack.
There are also a million different ways you can add extra flavours to these. So far we’ve tried adding a spoonful of cocoa powder, some cinnamon and blueberries. You can also put toppings on them.
